Kerala Egg Puffs
Every bakery in Kerala sells these: puff pastry filled with onion masala and half a boiled egg. One sheet of store-bought pastry does six.
40 minutes Serves 6 Easy
What you need
- 1 sheet puff pastry, thawed
- 4 boiled eggs, halved
- 2 onions, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric, 1/2 tsp chilli powder, 1/2 tsp garam masala
- 1 sprig curry leaves
- 1 tbsp oil
- 1 egg, beaten, for brushing
- Salt to taste
The easy way to cook it
- 1
Heat the oil and soften the onions with the curry leaves, then add the ginger-garlic paste and spice powders and cook for 2 minutes. Let the masala cool.
- 2
Fold the halved eggs through the cooled masala, gently.
- 3
Cut the pastry into 6 squares. Spoon masala and one egg half onto each, fold into triangles and seal the edges with a fork.
- 4
Brush with beaten egg and bake at 200°C / 400°F for 18 to 20 minutes until puffed and golden.
- 5
Rest for 5 minutes before eating — the filling is very hot.
Cook's note: Keep the pastry cold until it goes into the oven. Warm pastry puffs unevenly.
